Oltrepò Pavese Metodo Classico
About the wine
Oltrepò Pavese Metodo Classico is a distinguished Italian sparkling wine denomination centered on the Pinot Nero grape, which finds one of its most favorable expressions in the hilly landscapes of the Pavia province. Recognized as a DOCG in 2007, this wine is crafted exclusively through the traditional bottle-fermentation method. The wines are characterized by their fine, persistent perlage, a sophisticated bouquet derived from extended lees aging, and a palate that balances freshness, structure, and salinity. The production includes both white and rosé versions, with specific sub-typologies highlighting a higher percentage of Pinot Nero. The terroir, defined by complex geological formations—ranging from marly-calcareous soils to sandstone—combined with the unique climatic conditions of the Oltrepò hills, imparts a distinct mineral backbone and elegance to the wines. It is a testament to a long-standing regional tradition of sparkling wine production that emphasizes quality through rigorous viticultural standards and mandatory aging on the lees.
